Ingredients List

  • 1 refrigerated pie crust
  • 1 1/2 cups canned sweet potatoes 15-ounce can
  • 1 cup half and half
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs eggs beaten
  • 4 ounces whipped topping or whipped cream

Instructions

Preheat Oven

  • Preheat oven to 425℉.

Crust

  • Place the crust into the bottom of the pie plate, making sure the edges hang evenly around the top.
  • Crimp the edge of the crust to create a scalloped look.

Mix It Up

  • Beat together the sweet potatoes, brown sugar, cinnamon, nutmeg,, half-and-half, and eggs until creamy and smooth. We recommend using a blender or food processor but you can also beat with a hand mixer.
  • Spoon the mixture into the prepared pie crust.

Bake

  • Bake at 425℉ for 15 minutes then reduce the oven to 350℉ and bake for an additional 35 – 40 minutes.
  • The pie is done when the center doesn't giggle when you shake the pie plate.

Cool Down

  • Cool on wire cooling rack for 45 – 60 minutes.
  • Serve with whipped topping or whipped cream. whichever you prefer.
