Place the crust into the bottom of the pie plate, making sure the edges hang evenly around the top.
Crimp the edge of the crust to create a scalloped look.
Mix It Up
Beat together the sweet potatoes, brown sugar, cinnamon, nutmeg,, half-and-half, and eggs until creamy and smooth. We recommend using a blender or food processor but you can also beat with a hand mixer.
Spoon the mixture into the prepared pie crust.
Bake
Bake at 425℉ for 15 minutes then reduce the oven to 350℉ and bake for an additional 35 - 40 minutes.
The pie is done when the center doesn't giggle when you shake the pie plate.
Cool Down
Cool on wire cooling rack for 45 - 60 minutes.
Serve with whipped topping or whipped cream. whichever you prefer.
