This quick and easy sweet potato pie can be whipped together in under 20 minutes. This Southern classic pie will be ready for a scoop of your favorite ice cream before you know it.
Place the crust into the bottom of the pie plate, making sure the edges hang evenly around the top.
Crimp the edge of the crust to create a scalloped look.
Mix It Up
Beat together the sweet potatoes, brown sugar, cinnamon, nutmeg,, half-and-half, and eggs until creamy and smooth. We recommend using a blender or food processor but you can also beat with a hand mixer.
Spoon the mixture into the prepared pie crust.
Bake
Bake at 425℉ for 15 minutes then reduce the oven to 350℉ and bake for an additional 35 - 40 minutes.
The pie is done when the center doesn't giggle when you shake the pie plate.
Cool Down
Cool on wire cooling rack for 45 - 60 minutes.
Serve with whipped topping or whipped cream. whichever you prefer.
