Easy Chocolate Fudge Brownie Pie Recipe

This easy chocolate fudge brownie pie is a chocolate lover’s delight! It can be put together in 10 minutes, even making the fudge brownie filling from scratch. Although you could use a box brownie mix, this recipe includes a homemade fudge brownie filling that is creamy, chewy, and pairs so well with whipped cream or a scoop of your favorite ice cream.

This is one of the easiest desserts you’ll ever make. All you need to prepare the filling is large bowl and a wire whisk. Be sure to blend the mixture well after adding each egg. There shouldn’t be any streaks of yellow from the yolks or clear spots from the egg whites. You want a creamy, well-blended filling before pouring it into the pie plate.

This recipe is perfect for adding your own favorite ingredients. Like coconut? Stir in a tablespoonful or two. Like white chocolate? Stir in a 1/4 cup of white chocolate chips. I love peanut butter and chocolate. When baking this pie for myself I usually add a handful of peanut butter chips. One of my neighbors always makes this pie during the holidays and adds peppermint. She crushes a candy cane and sprinkles the pieces into the filling.

There is one trick to having this pie come out perfect. The crust should be frozen before adding the filling. I prefer refrigerated Pillsbury pie crust. Leave the crust at room temperature for 15-20 minutes to soften. Arrange the crust in the pie plate, flute the edge, and FREEZE for at least 10 minutes. You can also use a premade frozen crust if you have one. I’m not a big fan of frozen pie crusts because they usually come in aluminum foil pans. As a former chef the first knife I grab is always my trusty chef’s knife. The knife cuts through the aluminum foil pan like a hot knife through butter. If you decide to use a frozen crust, remember to cut the pie with a butter knife or other utensil that won’t cut completely through the aluminum pan.

  • 1 9-inch deep dish pie plate
  • 1 large bowl
  • 1 wire whisk
  • 1 wire cooling rack
  • 1 measuring cup
  • 1 set of measuring spoons
  • 1 spoon or spatula

Ingredients List

  • 1 refrigerated pie crust or frozen
  • 12 ounces semi-sweet chocolate chips
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 2 tsp instant coffee
  • 1 tsp vanilla extract
  • 1 stick butter melted
  • 3 eggs

Instructions

Preheat Oven

  • Place a cookie or baking sheet on the middle rack and preheat oven to 350℉.

Melt The Chocolate

  • Melt the chocolate chips in microwave or on stovetop.
  • Set aside to cool while preparing the filling.

Prepare The Filling

  • In large bowl whisk together the light brown sugar and melted butter.
  • Beat in the eggs one at a time. Be sure the mixture is well blended before adding the next egg.
  • Whisk in the melted chocolate chips, instant coffee, and vanilla extract.
  • Finally stir in the all-purpose flour. Mix until well blended.
  • Pour or spoon the mixture into the frozen pie crust.

Bake

  • Place on preheated cookie sheet and bake for 30-35 minutes.
  • Pie is done when center is set. To check the pie you can use the same method as testing brownies for doneness. A toothpick or knife inserted directly into the center should come out clean.

Cool

  • Allow to sit on wire cooling rack for 2 hours or until the pie plate is cool to the touch.
