Key Lime Pie isn’t just a summer treat. It should be enjoyed year round, especially when it’s cold outside and we all wish it was summer! This Strawberry Key Lime pie has two layers of luscious key lime. The top layer was sweet strawberries blended into that signature taste we all know as Key Lime.
Even though this pie is assembled in layers, it can easily be put together in 15 minutes. It uses a premade graham cracker crust, which is standard for most cream and key lime pies. Of course you’re welcome to use a flaky crust but that would require prebaking the crust. Easy pie recipes using time-saving shortcuts are the newest trend, and I suspect they’ll soon replace most of the classic and traditional pie recipes.
This recipes calls for only six ingredients including the crust. Locating good fresh strawberries will be the biggest challenge. Most of the strawberries found in grocery stores absolutely suck. Many strawberry pie recipes claim that strawberry pie is a summer thing. That’s most likely because summer is when most of us can get locally-grown strawberries. If you’re relying on store-bought berries, the best advice I can give is to choose the ones that look the juiciest, even if they’re over ripe. If they have green spots, the strawberries will be hard and never fully ripen.
Strawberry Key Lime Pie Recipe
Utensils & Equipment
- 1 medium bowl
- 1 wire whisk
- 1 spoon or spatula
- 1 small bowl
- 1 fork
- 1 measuring cup
- 1 set of measuring spoons
Ingredients List
- 1 graham cracker crust
- 14 ounces sweetened condensed milk
- 4 egg yolks
- 1/2 cup key lime juice or regular lime juice
- 8 ounces strawberries fresh and not frozen
- 1/2 tsp strawberry extract
Instructions
Preheat Oven
- Preheat the oven to 350℉.
Prepare The Bottom Filling
- In medium bowl whisk together the egg yolks until well blended.
- First whisk in the sweetened, condensed milk then whisk in the key lime juice.
- Pour 1/2 of the mixture into a small bowl. This will be used to make the top strawberry layer.
- Set the medium bowl aside to thicken while preparing the strawberry layer.
Prepare The Strawberry Layer
- Remove the stems from the strawberries and cut off any bad spots.
- In small bowl or on a plate, mash the strawberries with a fork. If possible keep mashing until the berries are almost pureed.
- Gently blend the pureed strawberries and strawberry extract into the smaller bowl with the filling. This is your top layer.
Assemble The Layers
- Pour the filling from the medium bowl into the graham cracker crust.
- Next, gently scoop the strawberry layer onto the bottom layer.
Bake
- Bake at 350℉ for approximately 15 minutes. The center of the pie should be slightly jiggly and not fully set.
Cool
- Refrigerate for at least 2 hours.
