Ingredients List
- 1 refrigerated pie crust
- 1 1/2 cups canned sweet potatoes 15-ounce can
- 1 cup half and half
- 2/3 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs eggs beaten
- 4 ounces whipped topping or whipped cream
Instructions
Preheat Oven
- Preheat oven to 425℉.
Crust
- Place the crust into the bottom of the pie plate, making sure the edges hang evenly around the top.
- Crimp the edge of the crust to create a scalloped look.
Mix It Up
- Beat together the sweet potatoes, brown sugar, cinnamon, nutmeg,, half-and-half, and eggs until creamy and smooth. We recommend using a blender or food processor but you can also beat with a hand mixer.
- Spoon the mixture into the prepared pie crust.
Bake
- Bake at 425℉ for 15 minutes then reduce the oven to 350℉ and bake for an additional 35 – 40 minutes.
- The pie is done when the center doesn't giggle when you shake the pie plate.
Cool Down
- Cool on wire cooling rack for 45 – 60 minutes.
- Serve with whipped topping or whipped cream. whichever you prefer.
